Keeping it Green
Anyone who loves Guacamole as a gorgeous dip or side dish should know how to prevent it going brown. The problem is an enzyme in the avocado reacts with oxygen causing the discolouration. The same happens when you cut into an apple. It’s called oxidization.
There are a number of tales that just do not work such as leaving the stone/pit in the avocado or adding lemon juice to the guacamole. The stone/pit has no effectiveness at all and the lemon juice would change the flavour of the guacamole so No and No.
Most people place the guacamole into an airtight container, place plastic wrap/clingfilm onto the guacamole and then seal the lid. This does work but only for a day possibly two.
However, a far more effective method has been used for years but is far less known.
Place the guacamole into an airtight container and pat it flat.
Now for the weird part, slowly and gently pour cold water over the top of it until you have about 1/3rd to ½ an inch in depth. Pop on the lid and carefully put it in the fridge.
When you come to use the guacamole, simply drain the water off fully and give it a stir.
You would never know it had been under water. Strange but it works
