Oat Raisin Biscuits
Ingredients
- 150 g rolled oats
- 100 g plain flour
- 100 g unsalted butter softened
- 80 g brown sugar
- 50 g granulated sugar
- 1 large egg free range
- 1 tsp vanilla extract
- 1/2 tsp ground cinnamon
- 1/2 tsp baking soda
- 1/4 tsp salt
- 100 g raisins
Instructions
- Preheat your oven to 180°C (160°C fan) / 350°F / Gas Mark 4. Line a baking tray with parchment paper.
- In a large bowl, cream together the butter, brown sugar and granulated sugar until light and fluffy.100 g unsalted butter, 80 g brown sugar, 50 g granulated sugar
- Beat in the egg and vanilla extract until well combined.1 large egg, 1 tsp vanilla extract
- In a separate bowl, whisk together the flour, oats, cinnamon, baking soda and salt.150 g rolled oats, 100 g plain flour, 1/2 tsp ground cinnamon, 1/2 tsp baking soda, 1/4 tsp salt
- Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
- Gently fold in the raisins.100 g raisins
- Drop spoonful’s of the dough onto the prepared baking tray, leaving space between each biscuit.
- Bake for 12-15 minutes, or until the edges are golden brown.
- Allow the biscuits to cool on the tray for a few minutes before transferring to a wire rack to cool completely.
