  • Bring a large pot of salted water to the boil and cook the pasta according to the packet instructions until al dente.
    400 g spaghetti
  • While the pasta is cooking, heat the olive oil in a large frying pan over medium heat. Add the garlic and sauté until golden and fragrant, about 2 minutes.
    2 tbsp olive oil, 3 cloves garlic
  • Add the sardines, breaking them into smaller pieces with a spoon. Stir in the lemon zest, juice, capers (if using), olives, and chilli flakes. Cook for 3-4 minutes to warm through.
    120 g sardines, 1 medium lemon, 2 tbsp capers, 50 g black olives, 1 tsp dried chilli flakes
  • Drain the pasta, reserving a small cup of pasta water. Toss the pasta into the frying pan with the sardine mixture, adding a splash of the reserved pasta water to loosen the sauce if needed.
  • Season with salt and pepper, and stir in the fresh parsley. Serve immediately, garnished with toasted breadcrumbs if desired.

The sardines can be fresh or canned, whichever is available. I always have a tine of sardines in the larder.
