Ingredients
- 1 large ripe avocado peeled, pitted, and roughly chopped
- 6 oz goat cheese 110-170 g
- 2 large ripe tomatoes sliced
- 1 clove garlic finely chopped
- 1 tbsp lemon juice 15 ml
- 12 slices favourite bread
- Salt
- 1-2 ripe tomatoes sliced
Instructions
- Mix together the avocado, garlic, lemon juice, salt, and pepper.
- Spread the avocado mixture on one side of the bread.
- Spread the goat cheese on the other side, and place the tomato slices in between.
- Place under the grill until the bread is lovely and golden.
