Simple Shortbread is a superb biscuit for dunking. The taste is amazing and when ready from start to eating within 35 minutes its a perfect snack. Used in lunchboxes, snacks and biscuits all year round. Best of all it only contains Caster Sugar, Plain Flour and unsalted butter. Item we all have in the fridge and larder.

  • Add the soft butter and sugar into a mixing bowl.
    125 g unsalted butter, 55 g caster sugar
  • Beat them together to create a smooth mixture.
  • Add the flour gradually to create a smooth paste.
    180 g plain flour
  • When mixed, remove from the bowl and place on any cool clean surface.
  • Use a rolling pin the reduce the thickness to 1/2 inch. Try to make it as rectangle/square as possible.
  • Cut the mixture into fingers and place onto a baking tray.
  • Use a fork to puncture the surface of the shortbread mixture.
  • Sprinkle the extra caster sugar and place in the fridge for 20 – 30 minutes.
  • Preheat your oven to 190C/375F/Gas Mark 5.
  • Remove from the fridge and bake for 15 – 20 minutes until a pale golden brown.
  • Remove from the baking tray to stop them baking and place on a wire tray/rack to cool.
  • Enjoy.
