Poached Egg, Ham and Mustard on Toast means mornings don’t have to be a rush – this tasty topper of poached egg and ham is ready in minutes. This has always been a hit with the family and friends for weekend breakfast and brunch. This is even suitable for those work days.  Try replacing the mustard with pickle or fruit chutney, or spoon over some hollandaise sauce for a special occasion. I often serve this with chopped chives on top for added colour and that mild onion taste.  However I have found at Lakeland an egg poacher that does 6 eggs at a time. This has saved the day.

  • Add the eggs to a pan of boiling water and poach for 2-3 minutes or slightly longer for a firmer result
  • Meanwhile, toast the bread, spread with the mustard and add the ham on top
  • Place the poached egg on top and season with black pepper
