When you fancy something old but new then we have the recipe for you. Posh Beans on Toast is a new version of an old recipe. This is a whole meal in one go after adding cannellini beans and superb Cumberland Sausages. When you tell people they are having beans on toast, its nice but when you serve this dish their expression will change. Posh Beans on Toast is a good name. You can always add a fried egg on top for another flavour and texture. I serve this on rustic bread as normal bread will go soggy but this won’t. It is the perfect accompaniment to mop up the sauce and beans.

Ingredients
- 4 fresh Cumberland sausages
- 400 g tomatoes can, chopped
- 2 tbsp Worcestershire Sauce
- 2 tbsp tomato ketchup
- 400 g cannellini beans drained and rinsed
- 400 g mixed beans drained and rinsed
- 4 slices rustic bread toasted
- 2 tbsp parsley chopped
Instructions
- Place the sausages on a lined grill pan and place under a preheated grill for 10 minutes, turning once or twice until cooked throughout.
- Meanwhile, place the tomatoes, Worcestershire sauce and ketchup in a large saucepan, add the beans, cover and cook for 5 minutes.
- Spoon onto the toasted bread and top each with a sliced sausage and sprinkle with parsley.
