A superb catfish recipe that you will make time after time. Seasoned Pan Fried Catfish is a very quick main dish to prepare and when served with a sauce and rice is hard to beat. Luckily, catfish are strong enough and firm enough to handle a good seasoning without losing the flavour. I also add paprika or cayenne pepper for a little extra kick.

Ingredients
- 1/2 cup instant potato flakes
- 1/2 tsp seasoned salt
- 1/8 tsp black pepper
- 1 lb catfish fillets/steaks
- 1 large eggs beaten – free range
- cooking spray as needed
Instructions
- In a shallow dish, combine potato flakes, seasoned salt, and pepper.1/2 cup instant potato flakes, 1/2 tsp seasoned salt, 1/8 tsp black pepper
- Dip catfish fillets in beaten egg, then coat well with seasoned potato mixture.1 lb catfish, 1 large eggs
- Place in a large nonstick skillet coated generously with cooking spray, and cook over medium heat until fillets are golden, about 10 minutes.cooking spray
- Spray remaining uncooked side of fillets with cooking spray, turn over, and continue cooking until golden and fish flakes easily with a fork (about 10 more minutes). Turn only once during cooking.
