    400 g pasta
  • Drain well and set aside, keeping a small cup of the cooking water.
  • Heat the olive oil in a wide pan over medium heat.
    2 tbsp olive oil
  • Add the chopped onion and cook gently until soft and translucent.

  • Stir regularly so the onion softens without colouring.
  • Add the garlic and cook for one minute.

  • Stir constantly to prevent it from burning.
  • The aroma should smell fragrant rather than sharp.
  • Pour in the chopped tomatoes and stir well.

  • Add the sugar, salt, and black pepper.

  • Let the sauce simmer gently for ten minutes until slightly thickened.
  • Tear most of the basil leaves and stir them into the sauce.

  • Add the cooked pasta and toss until well coated.
  • Loosen the sauce with a splash of reserved pasta water if needed.
  • Taste and adjust the seasoning if required.
  • Serve immediately with the remaining basil scattered on top.
