Ingredients
- 6 fresh chipolata sausages
- 6 large mushrooms
- 6 ripe Cherry Tomatoes
- 3 large new potatoes cooked
- 2 large eggs free range
Instructions
- Place 6 chipolata sausages in a frying pan and dry fry for 4-5 minutes
- Add 6 mushrooms, halved, 3 cooked new potatoes, thickly sliced and 6 cherry tomatoes, whole, and cook for a further 4-5 minutes
- Roughly halve the ingredients in the pan and then break 1 egg over each half
- Cook for a further 2-4 minutes and then finish off under the grill if egg is too runny
