  • Bring a large pan of salted water to the boil. Add the spaghetti and cook until al dente, following packet instructions. Reserve a small cup of pasta water, then drain.
    200 g spaghetti
  • Heat the olive oil in a large pan over medium heat. Add the shallot and cook for 2–3 minutes until soft. Stir in the garlic and cook for another minute.
    1 small shallot, 2 tbsp olive oil, 2 cloves garlic
  • Pour in the white wine and bring to a gentle simmer. Add the mussels and clams, then cover with a lid. Cook for 4–5 minutes, shaking the pan occasionally, until the shells open.
    300 g fresh mussels, 150 ml dry white wine, 200 g clams
  • Add the cherry tomatoes and cook for 2–3 minutes until they begin to soften. Remove any unopened mussels or clams.

  • Stir in the lobster meat and cook gently for 2 minutes. The lobster should be heated through but not overcooked.

  • Add the drained spaghetti to the pan. Toss everything together well. If needed, add a splash of reserved pasta water to loosen the sauce.
  • Add the lemon juice and chopped parsley. Season with salt and black pepper. Toss again to combine.

  • Divide between two bowls and serve hot, with extra parsley if desired.
