Instead of the usual bacon and eggs why not try Eggs Blackstone. It is a slight twist from the usual Eggs Benedict and is superb for breakfast and brunch. We had even supplied the recipe for a perfect Hollandaise Sauce. This breakfast is remarkably easy to produce and the flavour and surprise from the crumbled bacon take this to a new level. I normally serve this on a small bun or muffin or even a slice of lightly toasted bread. Lets face it. Everybody enjoys variety in their lives, so why not include it in their breakfast/brunch. I also add a little fresh red chillies and coriander to this recipe as a garnish.

Makes a refreshing change from normal eggs and bacon. This is a superb brunch recipe that is so easy to cook.

Ingredients
- 3 rashers bacon
- 6 slices ripe tomato
- 6 eggs poached
- flour dredging
- Hollandaise sauce See recipe on this site for Hollandaise Sauce
- Salt to taste
- Pepper to taste
Instructions
- Fry the bacon until crisp.
- Drain on paper towels and crumble.
- Season the tomato slices with salt and pepper and dredge in flour.
- Fry in the bacon fat until light golden brown on both sides and drain on paper towels.
- Place tomato slices on a serving platter or individual plates.
- Sprinkle with the crumbled bacon and place a poached egg on top of each tomato slice.
- Top with Hollandaise sauce.
