  • Cut the avocados in half and remove the stones. Scoop the flesh into a bowl.
    2 large ripe avocados
  • Add the lime juice, olive oil, salt, and black pepper. Mash lightly with a fork until creamy but still slightly chunky.

  • Stir in half of the sliced chilli. Reserve the remaining chilli for garnish.

  • Toast the wholemeal bread until golden and crisp around the edges.

  • Fill a medium saucepan with water and bring it to a gentle simmer. Add the white vinegar.

  • Crack one egg into a small cup or ramekin.

  • Stir the water gently to create a whirlpool. Carefully slide the egg into the centre.
  • Cook the egg for about 3 minutes until the white looks firm but the yolk stays runny.
  • Lift the egg out with a slotted spoon and place it onto kitchen paper. Repeat with the remaining eggs.
  • Spread the smashed avocado evenly over the toasted bread slices.
  • Top each slice with a poached egg.
  • Scatter over the remaining chilli and the micro herbs.
