Taking a humble vegetable and turning it into the centrepiece of a meal is actually a very satisfying task. Red peppers are particularly good for this because they have a lovely natural sweetness. Once baked, they soften beautifully and develop an even richer flavour. However, what I enjoy most is discovering just how many different fillings work well inside them.
My Stuffed Red Pepper is a little experiment that has become a dish I enjoy making at home. It brings together beef mince, mushrooms, onions and a selection of herbs and spices. Everything is combined to make a deliciously savoury filling. This is then spooned into a hollowed-out red pepper, ready for the oven.
I like keeping the little pepper lid and putting it back on once the filling has been added. It gives the finished dish a rather attractive appearance. More importantly, it helps keep the filling covered while everything cooks. When the peppers come out of the oven, they should be tender without losing their shape.
One of the things I particularly enjoy about this dish is the opportunity to experiment. The basic combination of beef, mushrooms and onions provides a wonderful starting point. However, there is no reason to stop there. A little garlic adds another layer of flavour, while smoked paprika gives the filling a gentle warmth. Sometimes, I might add a pinch of chilli if I fancy something with a little more character.
Fresh parsley, thyme or oregano are all lovely additions. In fact, changing the herbs and spices slightly can give the same dish a completely different personality. It is an excellent way to use ingredients already sitting in the kitchen cupboard.
What I Like Serving With Stuffed Red Peppers
Although the stuffed pepper is quite filling on its own, I always enjoy serving it with a few accompaniments. My personal favourite is roast potatoes with a lovely gravy-like sauce. There is something about the combination of crisp potatoes, savoury beef filling and a rich sauce that makes this a particularly comforting meal.
However, there are plenty of other possibilities.
- Roast potatoes: Golden and crispy on the outside, with fluffy centres. My first choice for this dish.
- Rich onion gravy: A lovely savoury sauce that complements the beef and mushrooms.
- Creamy mashed potatoes: Perfect for soaking up any juices from the filling.
- Buttered rice: A lighter accompaniment that allows the pepper to remain the star.
- Garlic bread: Particularly enjoyable when you want something to mop up the delicious juices.
- Steamed green beans: Their fresh flavour provides a nice contrast to the rich filling.
- Roasted carrots: Their natural sweetness works beautifully alongside the red pepper.
- Creamy coleslaw: A little crunch and freshness can make an interesting contrast.
- Buttered peas: A simple, traditional addition that always seems to work.
- Crusty bread: Ideal for enjoying every last bit of the sauce.
A Dish Worth Experimenting With
Another reason I like making stuffed peppers is that they are easy to prepare ahead. You can make the filling earlier in the day and keep it covered in the refrigerator. Then, when dinner time arrives, simply fill the peppers and get them into the oven.
You can also experiment with different types of mince. Beef gives a lovely traditional flavour, but pork or lamb could make interesting alternatives. For a slightly different texture, try adding a little cooked rice or some finely chopped vegetables to the filling.
I also think these peppers look wonderful when brought straight to the table. Each person gets their own individual pepper, complete with its little lid. It makes an ordinary evening meal feel just a little more special without requiring lots of extra work.
For me, Stuffed Red Pepper is exactly what home cooking should be about. Sometimes the best dishes come from a little experimentation rather than following a complicated plan. And if there are roast potatoes and plenty of gravy on the table, I am certainly not going to complain!
