  • Place the shop brought cake cups into the muffin tin. They are cheap to buy and will get a lot of usage.
  • Preheat the oven to 205C/400F
  • Add the all-purpose flour, baking powder, salt, ½ cup white sugar and the chocolate chips to a bowl and mix well.
    ½ cup sugar, ½ tsp salt, 3 tsp baking powder, 2 cups flour, ¾ cup chocolate chips
  • Add the milk, oil and the eggs to the dry ingredients and blend thoroughly. The result should be a lumpy batter. Just make sure they are no clumps of dry ingredients.
    1 large eggs, ¾ cup milk, 1/3 cup vegetable oil
  • Spoon the muffin mixture into the cup holders filling about 2/3rds of the way up. They will expand when cooked.
  • Sprinkle a little of the remaining white sugar over the top of the muffin for a delicious crispiness.
    3 tbsp sugar
  • Place the tray in the preheated oven for 20 – 25 minutes until cooked. To test, pierce a muffin in the middle with a cocktail stick. If it comes out clean, then its perfect, if not then they need a few more minutes.
  • Once cooked, remove from the oven and the tray and allow to cool on a wire rack.
  • Serve hot or cold, they are brilliant both ways.
