Ingredients
- 500 g chicken breast fillets skinless , boneless – diced
- 2 tbsp vegetable oil
- 1/2 large green pepper deseeded and sliced
- 1/2 large red pepper deseeded and sliced
- 2 medium carrots sliced finely on an angle
- 1 clove garlic minced
- 1 tbsp cornflour
- 4 tbsp soy sauce
- 200 g pineapple pieces- save the juice
- 1 tbsp rice vinegar
- 1 tbsp light brown sugar soft
- 1/2 tsp ground ginger
Instructions
- Brown chicken in oil in a large wok over medium high heat.500 g chicken breast fillets, 2 tbsp vegetable oil
- Add green pepper, red pepper, carrot and garlic and stir-fry for 1 to 2 minutes.1/2 large green pepper, 1/2 large red pepper, 2 medium carrots, 1 clove garlic
- In a small bowl, mix the cornflour and soy sauce together; pour mixture into the frying pan, along with the pineapple and juice, vinegar, sugar and ginger.1 tbsp cornflour, 4 tbsp soy sauce, 200 g pineapple, 1 tbsp rice vinegar, 1 tbsp light brown sugar, 1/2 tsp ground ginger
- Stir together and bring to a full boil.
- Serve with freshly cooked rice.
