  • Take 2lb lean boneless collar, shoulder or leg joint; cut string off joint and flatten out.
  • Cut into 6-8 large chunks removing any excess fat.
    900 g pork shoulder
  • In an oven-proof casserole, mix together root ginger, garlic, squashed, soy sauce, carton orange juice, sesame oil, brown sugar and hoisin sauce.
    2.5 cm ginger, 4 cloves garlic, 2 tbsp soy sauce, 1 carton orange juice, 1 tsp sesame oil, 2 tbsp brown sugar, 2 tbsp hoisin sauce
  • Add pork chunks and mix together.
  • Cover with lid and cook for about 2 hours until meat
