Chicken Fajita Filling is a combination of flavours, colours, spices and aromas that are perfect companions. The seasoning of cumin, paprika, garlic and chilli powder and oregano creates a lovely warmth and heat in the fajita. Any excess heat is cooled by the sour cream. Serve as part of a main dish with tortillas, sour cream, pico de gallo and sliced avocado.

Ingredients
- 2 large chicken breasts skinless/boneless
- 1 large red bell pepper slice
- 1 large yellow bell pepper slice
- 1 large green bell pepper slice
- 1 large onion peel thinly slice
- 1 medium lime juice only
- ½ tsp oregano
- ½ tsp paprika
- ½ tsp salt
- ½ tsp pepper
- 1 tsp garlic powder
- ½ tbsp ground cumin
- ½ tbsp chilli powder mild
Instructions
- Add the spices to a mixing bowl and stir well.
- Lay the chicken breasts on a plate and sprinkle the seasoning over the chicken. Flip the breasts over and do the other side. Push the chicken breasts down and rub the seasoning firmly in.2 large chicken breasts
- Place a large saucepan over a medium heat and add the oil.
- Once hot, add the chicken breasts and cook for around 6 – 8 minutes on each side or until they are cooked through.
- When cooked remove from the pan and put to one side on a chopping board.
- Add the sliced onion and bell peppers to the pan and fry for 4 – 6 minutes until the had softened but still hold their shape. Stir frequently to make sure nothing sticks or burns.1 large red bell pepper, 1 large yellow bell pepper, 1 large green bell pepper, 1 large onion
- Slice the chicken breasts into strips and return to the pan along with any juices.
- Add the lime juice and stir everything gently.1 medium lime
