Stir Fry Green Beans and Peppers is a simple dish that is perfect as a side dish to many dishes. Served alongside steak, salmon, chicken and tofu for a very tasty meal. This vegetarian recipe is a highly flexible and can be adapted according to what you have in the fridge. Try adding a little soy sauce or hoisin sauce for a different flavour or a sliced chilli for more heat.
Stir Fry Peppers and Green Beans uses green beans and bell peppers as I love the colour ranges. However mushrooms, broccoli, asparagus and carrots work well. If your looking to bulk the dish then try adding rice noodles or soba noodles for extra body. Just remember to add soy sauce for the moisture.
I blanch the green beans first as I find they retain their amazing texture and colour that gets reduced during stir frying. I like to serve these piping hot but they are also very tasty at room temperature.
Stir Fry Peppers and Green Beans
Ingredients
- 1 large red bell pepper core and slice
- 1 large yellow bell pepper core and slice
- 3 cloves garlic peel/finely slice
- 1 medium onion peel/slice
- 1 lbs green beans trimmed
- ½ tsp red chilli flakes
- 3 tbsp olive oil
- salt to taste
- ground black pepper to taste
Instructions
- Place a pan of salted water over a high heat and bring to the boil. When boiling, add the trimmed green beans and cook for 4 minutes or until crisp.1 lbs green beans
- When ready, drain the pan and plunge the beans into ice cold water to stop cooking and preserve the colour.
- When cold, remove from the water and dry thoroughly with paper towel.
- Add the olive oil to a large frying pan and place over a medium high heat.3 tbsp olive oil
- Once hot, add the garlic, small pinch of salt, pinch of pepper and the chilli flakes and stir for 30 seconds. You want to release the garlic flavour without browning it.3 cloves garlic, salt, ground black pepper, ½ tsp red chilli flakes
- Add the onion and stir fry for 2 minutes to soften.1 medium onion
- Add the pepper and beans and continue to sti fry until the peppers have softened and the beans have warmed up again.1 large red bell pepper, 1 large yellow bell pepper
- Add the lemon zest and toss to combine.
- Serve immediately

Tried these with my pork chops and will definately be cooking again.
