  • Preheat your oven to 200°C/400°F/Gas Mark 6.
  • Slice the avocado in half and remove the pit. Using a spoon, carefully scoop out a bit of flesh from each half to create a larger cavity for the toppings.

  • Place the avocado halves on a baking sheet lined with parchment paper or aluminium foil.
  • In a small bowl, mix together the diced bell pepper and tomato. Season with salt and pepper to taste.

  • Spoon the bell pepper and tomato mixture into the cavity of each avocado half, dividing it evenly between the two.
  • Drizzle a little olive oil over the top of each stuffed avocado half.

  • While the avocados are baking, toast the bread slices until golden brown and crispy.

Hadn’t tried this until today but definitely ateky will be doing this again. Baking makes the avocado such a beautiful texture and flavour and spread on toast is perfect.
