Ingredients
- 8 medium beets boiled until tender, peeled, sliced
- 1/4 lb stilton blue cheese
- 3 tbsp red wine vinegar
- 3 tbsp walnut oil
- 1/2 cup walnuts chopped
- 1 pinch salt to taste
- 1 pinch ground pepper to taste
Instructions
- Gently toss the cooked, sliced beets with the vinegar and oil in a mixing bowl.8 medium beets, 3 tbsp red wine vinegar, 3 tbsp walnut oil
- Cover and refrigerate until ready to serve.
- Transfer the beets to a serving bowl or individual salad plates and sprinkle with walnuts and blue cheese.1/4 lb stilton, 1/2 cup walnuts
