Stilton is an soft crumbly English cheese which is produced in two varieties.  Blue, which has had Penicillium roqueforti added to generate a characteristic smell and taste, and White, which has not.  The cheese takes its name from the village of Stilton, now in Cambridgeshire, where it has long been sold. The cheese has an EU protected designation of origin limiting its production to 3 UK counties. Serve with port.
