Sauteed Sweet Peppers
A simple recipe that is fast to produce but adds an entirely different flavour and texture to any dish. Well worth a try with this fry.

Ingredients
- 2 medium green peppers cut 1" squares
- 2 medium red peppers cut 1" squares
- 1 tbsp olive oil
- 1/2 tsp basil dried
- 2 cups pilau rice hot
- 2 tbsp water
- 1 pinch freshly ground black pepper to taste
Instructions
- In a large skillet over medium heat, heat oil. Add peppers and saute for 3 to 5 minutes, stirring frequently.
- Add water and pepper; continue sauteing for 4 to 5 minutes or until peppers are tender. Stir in basil and remove from heat.
- Spread rice over a serving platter, spoon peppers and liquid on top, and serve.
Notes
A lovely side dish for a meat/fish dish.
