Breakfast Crostini
Ingredients
- 300 g baguette cut into 16 slices (approx. 1.5cm thick)
- 8 large cherry tomatoes sliced
- 1 medium red pepper thinly sliced
- 4 large mushrooms sliced
- 1 slice ham cut into strips
- 70 g spinach cooked water squeezed out
- 2 medium spring onions finely sliced
- 2 large eggs free range scrambled
- 75 g mature Cheddar reduced-fat finely grated
Instructions
- Prepare all your ingredients and assemble a selection of toppings.
- Lay the slices of bread on a grill pan and toast one side, then remove from the grill and turn the bread over.300 g baguette
- Arrange all the toppings on the bread, to create a selection of different crostini.8 large cherry tomatoes, 1 medium red pepper, 4 large mushrooms, 1 slice ham, 70 g spinach, 2 medium spring onions, 2 large eggs
- Make a few of each type. It doesn’t matter if the toppings overlap a little.
- Sprinkle each crostini with a little grated Cheddar.75 g mature Cheddar
- Grill until starting to brown and serve.
