For the Schnitzel:
- 4 large chicken breasts
- 100 g plain flour
- 2 large eggs free range
- 150 g breadcrumbs Panko breadcrumbs work best for extra crispiness
- 4 tbsp vegetable oil
- salt to taste
- pepper to taste
- 1/2 lemon lemon slices/wedges
Instructions
- Preheat your oven to 200°C (180°C fan)/Gas Mark 6.
- Peel and slice the potatoes into thick chips, about 1 cm wide.4 large potatoes
- Toss the chips in olive oil, season with salt and pepper, and spread them evenly on a baking tray.2 tbsp olive oil, salt, pepper
- Bake in the preheated oven for 25 minutes, turning halfway, until golden and crispy.
- While the chips are baking, place each chicken breast between two pieces of cling film or parchment paper. Use a rolling pin or meat mallet to flatten the breasts to about 1 cm thick.4 large chicken breasts
- Set up three shallow dishes: one with flour, one with beaten eggs, and one with breadcrumbs.100 g plain flour, 2 large eggs, 150 g breadcrumbs
- Season the chicken with salt and pepper. Dip each breast first in the flour, shaking off any excess, then in the egg, and finally coat it in the breadcrumbs, pressing gently to help them stick.salt, pepper

Such an easy dish. I used pork as I had some in the fridge. Lovely
The chicken schnitzel was nice and crispy, but I think it could have used a bit more seasoning. The lemon wedge was a nice touch, but next time I’ll add more herbs and spices to the breadcrumbs. The chips turned out great though, crispy on the outside and soft inside. Still a solid recipe that I’ll tweak to my liking.
