Finnan Haddie is a smoked seafood dish that has a flavour like no other. The poaching in milk of the thickest part of a haddock adds a flavour that is difficult to describe except gorgeous. This main dish or breakfast/brunch is also ready in 15 minutes and has only four ingredients. The thinly sliced onion and peppercorn add a subtle background flavour.

Ingredients
- 1 small onion sliced into rings
- 1 tsp whole black peppercorns 5 ml
- 3 lbs smoked haddock cut into portions, 900-1350 g
- 3 cups milk 750 ml
Instructions
- Place the onion rings and peppercorns in a heavy skillet.
- Arrange the smoked haddock pieces on top, then add the milk.
- Bring to a boil over high heat, reduce the heat and simmer covered for 10 minutes.
- Transfer the fish to a serving platter and discard the milk, onion, and peppercorns.
