- 1.5 kg gammon joint
- 1 large onion quartered
- 6 cloves garlic
- 2 leaves bay
- 10 whole black peppercorns
- 3 tbsp honey
- 2 tbsp Dijon mustard
- 2 tbsp brown sugar
- 1 tbsp maple syrup optional
- 1/2 tsp chilli flakes optional
Instructions
- Simmer the Gammon:
- Place the gammon joint in a large pot and cover with water.1.5 kg gammon joint
- Add the onion, cloves, bay leaves, and black peppercorns.
- Bring to a boil, then reduce the heat and simmer for 1 hour 30 minutes.
- Preheat your oven to 200°C (180°C fan)/Gas Mark 6.
- Prepare the Glaze:
- In a bowl, mix the honey, Dijon mustard, brown sugar, maple syrup and chilli flakes3 tbsp honey, 2 tbsp Dijon mustard, 2 tbsp brown sugar, 1 tbsp maple syrup, 1/2 tsp chilli flakes
- Glaze and Roast:
- Remove the gammon from the pot and place it in a roasting tray.

- Let the gammon rest for 10 minutes before slicing.
