A Potato and Pancetta Frittata is an Italian super excuse to sit down and have a proper meal. The combination of the boiled potato with fried pancetta and onions wrapped in a lovely soft egg are perfect together. It is in some ways a bacon and egg on steroids. Served as a main dish with a salad.

The omelette with potatoes, bacon and onions is not the usual potato omelette , it is a combination of flavors and aromas that are difficult to avoid.

Ingredients
- 3/4 lb potatoes peeled and diced
- 6 large eggs beaten
- 2 tbsp olive oil
- 2 large onions thinly sliced
- 6 oz pancetta thinly sliced
- 1 pinch red pepper flakes to taste
- 1 pinch Salt to taste
- 1 pinch ground pepper to taste
Instructions
- Cook the potatoes in boiling salted water until tender, 10 to 15 minutes.3/4 lb potatoes
- Drain and set aside.
- Meanwhile, heat the olive oil in a skillet over moderate heat and sauté the onions until lightly browned, about 10 minutes.2 tbsp olive oil, 2 large onions
- Add the pancetta and continue cooking until lightly browned, about 5 minutes.6 oz pancetta
- Season with salt, pepper, and red pepper flakes.1 pinch red pepper flakes, 1 pinch Salt, 1 pinch ground pepper
- Add the eggs and potatoes and continue cooking over moderate heat until the eggs have set on the bottom and only the top is runny.6 large eggs
- Place under a preheated broiler and cook until the top is set and lightly browned, 3 to 5 minutes.
- Serve warm, chilled, or at room temperature.
