Peanut Cookies are a childhood fond memory. Opening the lunchbox in search of these delicious treats. They do contain nuts. These biscuits/cookies are easy to produce and freezable. Serve as snacks, lunch boxes and picnics. I add raisins to the recipe but dried apricot give a lovely sweetness.

Ingredients
- ½ cup peanuts dry roasted or salted
- 2 cups raisins or other dried fruit
- 2 cups oats rolled/instant
- 2 cups rice cereal such as Rice Krispies
- ½ cup peanut butter creamy or crunchy
- ½ cup brown sugar
- ½ cup honey
- 1 tsp vanilla extract
Instructions
- Cover an 9-by-13-inch baking pan with cooking spray.
- Mix the peanuts, raisins, oats, rice cereal in a large bowl.
- Combine peanut butter, brown sugar and honey in a microwaveable bowl and cook on High until bubbling.
- Add vanilla essence and stir until blended.
- Pour the mixture over the dry ingredients and stir thoroughly until coated.
- Pour the mixture to the baking pan and press down firmly.
- Let stand for about 1 hour to harden.
- Cut into bars.
