  • Place the cooked chicken into a mixing bowl.
    300 g chicken breast
  • Add the mayonnaise and salad cream if using. Season lightly with salt and black pepper.
    4 tbsp mayonnaise, 1 tbsp salad cream, Salt, Freshly ground black pepper
  • Stir until the chicken is evenly coated.
  • Lay a tortilla flat on a clean work surface.
    4 large flour tortillas
  • Spread one-quarter of the chicken mixture across the tortilla, leaving a small border around the edge.
  • Scatter shredded lettuce evenly over the chicken.
    4 large lettuce leaves
  • Add a layer of grated carrot.
    ½ medium cucumber
  • Arrange cucumber strips and red pepper slices over the top.
    1 medium carrot, 1 small red bell pepper
  • Roll the tortilla tightly into a firm cylinder.
  • Repeat with the remaining tortillas and filling.
  • Place the wrapped rolls seam-side down and chill in the refrigerator for 20 to 30 minutes.
  • Remove the wraps from the refrigerator.
  • Using a sharp knife, trim the ends if desired.
  • Slice each wrap into six equal rounds.
  • Insert a cocktail stick through the centre of each round to hold it together.
  • Arrange the mini wraps on a serving platter.
  • Serve immediately or keep chilled until required.

Notes

Wrap the rolls tightly and chill them before cutting. The filling settles, the tortilla firms up, and you get cleaner slices that hold together better on the picnic table.
