Potato Casserole

Potato Casserole may not sounds brilliant but the flavours are. This simple vegetarian dish is easy to make and can be eaten on its own as a substantial main dish. However reduce the quantity and add leftover meats or a dressed salad and the options are endless. This is a versatile dish that can be eaten all year round and lets face it, who doesn’t like a dish with a lot of melted cheese. when I don’t know what to make at the end of a week, this recipe is often a go to dish.

  • Preheat the oven to 190C/375F/Gas Mark 5.
  • Add a large saucepan of water over a high heat and add the potatoes.
    1 ½ lbs baking potatoes
  • Heat until it simmers and reduce the heat to keep it simmering away. Cook until the potatoes are tender. Normally about 10 – 15 minutes depending on size.
  • In a smaller saucepan, add the butter, sour cream, mushroom soup, scallions, slat and pepper and stir.
    ½ cjup sour cream, 3 large scallions, 1.2 oz unsalted butter, 4.5 oz cream of mushroom soup, salt, black pepper
  • Add half of the grated cheese.
    4 oz cheddar cheese
  • Drain the potatoes and carefully transfer to the butter mixture and toss/stir until everything is combined and coated.
  • Transfer to your baking dish and top with the other half of the grated cheese.

  • Place the baking dish on a baking tray( to catch any spills) and place in the preheated oven on the middle shelf.
  • Bake for about 30 minutes or until the cheese on top is golden brown and bubbling away.
  • Remove form the oven and serve.
