Quick Caprese Salad is a refreshing filling salad side dish from beautiful Italy. The main ingredients are mozzarella and ripe tomatoes, two old friends. This is a perfect salad for summer days especially with chicken and fish and a chilled wine. Served as a salad, a side dish and also a main dish. Try adding a splash of balsamic vinegar for extra hit and I like to serve it with sliced bell peppers and black olives.

One of my favourite recipes. The combination of the mozzarella, fresh tomatoes, bell peppers and olives makes this recipe look beautiful and taste amazing.

Ingredients
- 1 lb ripe tomatoes
- ½ cup mozzarella
- 1 medium red bell pepper
- 1 medium green bell pepper
- 16 medium black olives
- 2 tbsp olive oil good quality
- Balsamic vinegar optional
- salt to taste
- ground pepper to taste
Instructions
- Cut the tomatoes into chunks, the size being dependant of the variety you are using.1 lb ripe tomatoes
- Cut the mozzarella into small cubes.½ cup mozzarella
- Slice the red and green bell peppers into strips making sure to remove the seeds and core.1 medium red bell pepper, 1 medium green bell pepper
- Arrange the tomatoes, mozzarella and sliced peppers in a serving bowl and drizzle with olive oil.2 tbsp olive oil
- Also drizzle with Balsamic vinegar (if using) and taste.Balsamic vinegar
- Season with salt and pepper if required.salt, ground pepper
- Scatter the olives around the bowl and add a few basil leaves.16 medium black olives
- Serve immediately.
