Classic Homemade Coleslaw is an essential part of my diet now a days. Added to a bowl of fresh scampi, in a burger, a rack of ribs finishes the dish for me. It cuts through the fried food with a lovely crisp fresh flavour which in turn magnifies the rest of the bowl. I like to add small diced apple and sultanas to my coleslaw as additional textures and flavours. Most of all the the moist sultanas pop with flavour being in the vinegars. Serve as a filling, a side dish or as a snack. Also if you like a little heat, add 1/2 tsp of paprika to the dressing for a gorgeous subtle flavour. Classic Homemade Coleslaw is a brilliant make in advance dish and a must have for summer bbq meals.

Instructions

  • Add the mayonnaise, cider and white vinegars, sugar, celery seeds into a large mixing bowl and stir well to combine. Taste and add salt and pepper if required.
    ½ cup mayonnaise, ½ tbsp cider vinegar, 1 tbsp white vinegar, 2 tsp sugar, ½ tsp celery seeds, salt, ground pepper
  • Add the cabbage, carrot, apple and sultanas to the dressing and toss to coat.
    3 cups white cabbage, 1 cup carrot, 1 large apple, 1/3 cup sultanas
  • Cover with clingfilm/plastic wrap and place in the fridge for the flavours to incorporate. Ideally over an hour.
  • Serve when required.

Notes

I like to use celery seeds in coleslaw, breads, soups and so many other dishes. They provide and celery flavour with an earthy savoury flavour as well. Lovely.
