A Spinach Casserole is a wonderful vegetarian dish that is full of flavour and texture. Adding little extra like nutmeg and water chestnuts takes this recipe to a new dimension. The flavour compliment each other and this main dish is filling and satisfying. A lovely slow cooked dinner ready when you want it without having to stand at the stove.

A Spinach Casserole is a slow cooker recipe that is one of my vegetarian favourites. I always top it off with a good handful of grated cheese.

Ingredients
- 20 oz spinach
- 10 oz water chestnuts canned, drained and chopped
- 3 large eggs lightly beaten
- 1 cup cottage cheese
- 1/4 cup sour cream
- 2 tbsp all-purpose flour
- 3/4 cup chedder grated
- nutmeg grating
- salt to taste
- ground pepper to taste
Instructions
- Combine all ingredients in a bowl and stir to thoroughly combine.
- Pour into a lightly greased slow cooker and cook covered on low heat for 4 to 6 hours, or on high heat for 2 to 3 hours, until the casserole is set.
