A Spinach Casserole is a wonderful vegetarian dish that is full of flavour and texture. Adding little extra like nutmeg and water chestnuts takes this recipe to a new dimension. The flavour compliment each other and this main dish is filling and satisfying. A lovely slow cooked dinner ready when you want it without having to stand at the stove.

  • Combine all ingredients in a bowl and stir to thoroughly combine.
    20 oz spinach, 10 oz water chestnuts, 3 large eggs, 1 cup cottage cheese, 1/4 cup sour cream, 2 tbsp all-purpose flour, 3/4 cup chedder, nutmeg, salt, ground pepper
  • Pour into a lightly greased slow cooker and cook covered on low heat for 4 to 6 hours, or on high heat for 2 to 3 hours, until the casserole is set.
