Ingredients
- 400 g potato mixed peeled potato, swede and parsnips
- 1 spray low cal cooking oil
- 2 large chicken breasts
- ½ medium red pepper
- ½ medium yellow pepper
- ½ medium green pepper
- ½ medium onion finely chopped
- 200 ml vegetable stock low-salt
- 60 ml passata
- 2 tbsp tomato puree
- 1 clove garlic crushed
- 1 tsp smoked paprika sweet
- ½ tsp ground cinnamon
- 1 tsp Worcestershire sauce
- 1 tbsp mango chutney
- 100 g sugar snap peas mangetout
- 3 tbsp semi-skimmed milk
Instructions
- Bring a pan of water to the boil, cut the potatoes, swede and parsnips into 2cm chunks and simmer for 15–20mins until tender.400 g potato
- Meanwhile, lightly spray a frying pan with the 1 cal spray and put on a high heat. Add the chicken, peppers and onion and stir fry for 5 mins.1 spray low cal cooking oil, 2 large chicken breasts, ½ medium red pepper, ½ medium yellow pepper, ½ medium green pepper, ½ medium onion
- Stir together the remaining ingredients except the sugar snap peas and milk. Add to the frying pan, bring to the boil and simmer for 10 mins.
- Add the sugar snap peas. Cook for a further 5 mins.100 g sugar snap peas
- Drain the potatoes. Mash until smooth, stir in the milk, divide between plates and serve with the chicken.3 tbsp semi-skimmed milk
