Ingredients
For the Sauce
- 4 tbsp water
- 2 tsp dark soy sauce
- 2 tsp light soy sauce
- 4 tsp oyster sauce
- 2 tsp sugar
For the Chicken
- 500 g chicken breasts diced or thighs
- 4 cloves garlic peel/finely chop
- 1 large red chilli finely sliced
- 3 large scallions spring onions/chop
- 1 large red bell pepper core and chop
Instructions
- Add the water, sugar, both soy sauces and the oyster to a mixing bowl and stir well.4 tbsp water, 2 tsp dark soy sauce, 2 tsp light soy sauce, 4 tsp oyster sauce, 2 tsp sugar
- Place the wok over a high heat and add the oil.
- 4 cloves garlic, 1 large red chilli, 1 large red bell pepper
- Add the scallions/spring onions together with the chicken and continue to str fry to about 2 minutes.3 large scallions, 500 g chicken breasts
- Pour the sauce ingredients from the mixing bowl into the wok and fry until the liquid reduces into a lovely thick shiny sauce.
- Serve with steamed or jasmine rice for an amazing meal.

What a superb dish. I served it with sticky rice, also from this site and it was gorgeous. Looking for more combinations now.
The chicken is mosit and delicate whils the coating is slightly crunchy.
