Three Way Fresh Mushroom Sauce is a superb sauce that goes with all meats and ideal on a bowl of pasta. It’s simple and quick to prepare but the flavours are stunning. You can literally make this in the same time it takes to cook most pastas. Alternatively, you can also serve with vegetable and a bowl of rice for a truly vegetarian dish. It is also lovely that you can make this dish in advance, allow to cool and then reheat when needed.

Ingredients
- 2 tbsp olive oil
- 1 lb white mushrooms sliced
- 2 cups plum tomatoes coarsely chopped
- 1/2 cup green onions sliced
- 1 tsp garlic minced
- 1/2 tsp Salt
- 1/2 tsp ground black pepper
Instructions
- In a large nonstick skillet heat oil until hot. Add mushrooms; cook, stirring frequently, until mushroom liquid starts to evaporate, about 6 minutes. - Bring to a simmer, cover and cook until a sauce forms, about 5 minutes. Serve over hot cooked pasta.
