  • Slice the tomato rolls in half and set them aside. You can lightly butter them if you like extra richness.
    6 medium tomatoes
  • Place a frying pan over medium heat. Add the bacon rashers and cook until crisp and golden. Turn them occasionally so they cook evenly.
    4 rashers smoked bacon
  • Remove the cooked bacon from the pan and place it onto kitchen paper. Leave the bacon fat in the pan because this will flavour the tomatoes beautifully.
  • Slice or roughly chop the bacon into bite-sized pieces once it has cooled slightly.
  • Add the sliced tomatoes to the hot pan with a sprinkle of salt o bring out the flavour. Cook them gently in the bacon fat for several minutes. The tomatoes should soften slightly while still holding their shape.
  • Drizzle the balsamic vinegar over the tomatoes during the final minute of cooking. Allow it to bubble gently and coat the tomatoes.
    2 tablespoon balsamic vinegar
  • Place the roll halves onto serving plates. (Toast the rolls if you want) Spoon the warm tomatoes over the rolls and taste the tomatoes to check if more salt is required.
    4 medium rolls, Butter, salt
  • Scatter the chopped bacon evenly across the top.
  • Finish with black pepper and a sprinkle of fresh herbs for extra freshness and colour.
    Freshly ground black pepper, ¼ bunch chives
  • Serve immediately while warm.

Notes

Serving Suggestions:
This dish tastes wonderful with fresh orange juice, tea, or coffee. You can also serve it with scrambled eggs or a small green salad for a larger brunch.
