Twice Baked Sweet Potatoes are a vegetarian soft delicacy with the the moist flesh of the sweet potato and the sour cream. With the addition of the chopped pecans, you have another texture and another flavour. This is such a simple main dish but it’s filling, tasty and very easy.

Ingredients
- 2 medium sweet potatoes
- 3/4 tbsp fat free sour cream
- 1 3/4 tsp Sweetener
- 2 tbsp pecans chopped
- 1/2 tsp orange extract
- Salt to taste
- ground white pepper to taste
Instructions
- Lightly grease potatoes; pierce with tines of fork. Place potatoes in baking pan and bake in a 375 degree oven until tender, 35 to 40 minutes. Let stand until cooked enough to handle.2 medium sweet potatoes
- Cut potatoes in half; scoop out flesh. Mash potatoes until smooth; mix in sour cream, sweetener and orange extract. Season to taste with salt and white pepper.3/4 tbsp fat free sour cream, 1 3/4 tsp Sweetener, 1/2 tsp orange extract, Salt, ground white pepper
- Spoon potato mixture into 4 potato skins. Place potatoes in baking pan and bake in preheated 400 degree oven until browned, about 20 minutes. Sprinkle with pecans or coconut (after baking).2 tbsp pecans
