  • Mix together the avocado, garlic, lemon juice, salt, and pepper.
    1 large avocado, 1 clove garlic, 1 tbsp lemon juice, salt
  • Spread the avocado mixture on one side of the bread.
    12 slices bread
  • Spread the goat cheese on the other side, and place the tomato slices in between.
    6 oz goat cheese, 2 large tomatoes
  • Place under the grill until the bread is lovely and golden.
