Sweet Potato Mash is a lovely alternative side dish to the standard mashed potato. It also carries additional flavours superbly such as maple syrup, honey, horseradish and mustard. Sweet Potato Mash is often used as a base to raise steaks, poultry and fish from the plate for visual effect. The lovely orange colour compliments gravies, sauces and jus and doesn’t get diluted.
I often serve this with finely diced fried onion and chopped coriander/cilantro or parsley sprinkled on top. This recipe will not disappoint.
