  • Slice top off each potato. Scoop out center of each potato to within 1/4-inch of potato skin; set aside.
    6 large potatoes
  • In medium bowl combine potato, turkey ham, green pepper, onion, salt, pepper and yogurt.
    1 cup turkey ham, 1/4 cup green pepper, 2 tbsp onion, 1/2 tsp salt, 1/4 tsp pepper, 1 cup low-fat yogurt
  • Spoon turkey and potato mixture evenly into each potato shell; top with cheese.
    1/2 cup cheddar
  • On microwave-safe plate arrange stuffed potatoes spoke- fashion. Cook in microwave oven at HIGH (100% power) 4 minutes or until cheese melts and potatoes are hot. or
  • Pop into a preheated oven at 180C/ 350F/ Gas Mark 4 until the cheese turns delicious.
