Turkey & Ham Stuffed Potatoes are a simple and fast method to produce a superb side dish or actual main dish. I use these as a side when doing a bbq. Served with Spicy Barbecue Shrimp, teriyaki chicken or Turkey Burgers for a full meal for everyone with little hassle.
Turkey Ham Stuffed Potatoes
- Slice top off each potato. Scoop out center of each potato to within 1/4-inch of potato skin; set aside.
- In medium bowl combine potato, turkey ham, green pepper, onion, salt, pepper and yogurt.
- Spoon turkey and potato mixture evenly into each potato shell; top with cheese. On microwave-safe plate arrange stuffed potatoes spoke- fashion. Cook in microwave oven at HIGH (100% power) 4 minutes or until cheese melts and potatoes are hot.
