Cooking the potatoes in a microwave takes the hassle out of last minute rushing. Preparing the food like this means you can have a meal in minutes that should take you a lot longer. Served with Spicy Barbecue Shrimp, teriyaki chicken or Turkey Burgers for a full meal for everyone with little hassle.

Ingredients
- 6 large potatoes baked
- 1 cup turkey ham diced
- 1/4 cup green pepper finely chopped
- 2 Tbs onion finely chopped
- 1/2 tsp Salt
- 1/4 tsp Pepper
- 1 cup low-fat yogurt
- 1/2 cup cheddar grated
Instructions
- Slice top off each potato. Scoop out center of each potato to within 1/4-inch of potato skin; set aside.
- In medium bowl combine potato, turkey ham, green pepper, onion, salt, pepper and yogurt.
- Spoon turkey and potato mixture evenly into each potato shell; top with cheese. On microwave-safe plate arrange stuffed potatoes spoke- fashion. Cook in microwave oven at HIGH (100% power) 4 minutes or until cheese melts and potatoes are hot.
