I have always enjoyed so when I was given the recipe, I was so happy. Roasted Red Pepper Sauce is full of a lovely deep heat without being burning. The colour is vibrant and the aroma is captivating. I serve this as a sauce over meatballs and stir fried vegetables and so much more. However my favourite is pan fried chicken on a bed of rice with this sauce drizzled over. The red peppers give the heat but I often add a sliced red chilli for that extra kick.

  • In small non-stick skillet, sprayed with vegetable cooking spray, over medium heat, saute onions 2 to 3 minutes or until lightly browned. Add garlic and stir 30 seconds. Allow to cool for about 4-5 minutes.
    Vegetable cooking spray, 1 cup onion, 1 tsp garlic
  • In food processor fitted with metal blade, puree onion mixture, peppers and salt. With motor running, slowly add poaching liquid to red pepper mixture until sauce is smooth.
    1 jar roasted red peppers, 1/2 tsp Salt, 3/4 cup strained poaching liquid
  • Pour sauce into 2-cup glass measure and heat in microwave at HIGH (100% power) 30 seconds or until hot.
