Chayote Salad – Ensalada de Chayote is a lovely Mexican dish that is overlooked in much of the world. Chayote is an edible plant belonging to the same family as melons, cucumbers and squash. They are available from better supermarkets. This is a divinely simple recipe that even I can follow. Like many Mexican dishes is lovely but add the lime or lemon juice and oh my god. There is a burst of flavour as the juice marinades everything instantly and gives the kick you wanted. Also serve this with Tequila Shrimp, Chicken Fajitas and Sinaloa-Style Grilled Chicken – Pollo a la Brasas for a superb meal.

Ingredients
- 3 large chayotes peeled and seeded, cut into inch long pieces
- 1/2 tsp Dijon mustard 2 ml
- 2 tbsp lime juice 30 ml, or lemon
- 6 tbsp olive oil 90 ml
- 2 large tomatoes cut into eighths
- 1 large onion finely chopped
- 15 ripe olives
- 12 leaves Lettuce
- salt to taste
- ground pepper to taste
Instructions
- Boil the chayote in enough salted water to cover for 20 minutes, until tender.
- Add the chilled chayote, tomatoes, onion, and olives and toss to thoroughly coat the vegetables.
- Serve on a bed of lettuce.
