Instructions

  • Place the diced chicken into a large mixing bowl. Add the soy sauce, sesame oil, ground ginger, garlic, honey, cornflour and black pepper.
    700 g chicken breast, 4 tbsp soy sauce, 1 tbsp sesame oil, 1 tsp ground ginger, 2 cloves garlic, 1 tbsp honey, 1 tbsp cornflour, 1/2 tsp black pepper
  • Stir everything together well until the chicken is fully coated. Cover the bowl and leave it to marinate in the fridge for 30 minutes. If time is short, even 10 minutes will still add flavour.
  • Heat the vegetable oil in a large frying pan or wok over medium to high heat.

  • Add the sliced onion and mushrooms to the pan. Cook for 4 to 5 minutes until the mushrooms soften and the onion turns slightly golden.

  • Stir in the sliced red bell pepper and sweetcorn. Cook for another 3 minutes while stirring often.

  • Add the marinated chicken to the pan. Cook for 8 to 10 minutes until the chicken is fully cooked and lightly coloured around the edges.
  • While the chicken cooks, prepare the sauce. In a small bowl, mix the soy sauce, sesame oil, ground ginger, honey and chicken stock together.
    3 tbsp soy sauce, 1 tbsp sesame oil, 1 tsp ground ginger, 1 tbsp honey, 150 ml chicken stock
  • Pour the sauce into the pan once the chicken has cooked through. Stir carefully so the vegetables and chicken become evenly coated.
  • Add the cornflour mixture to the pan. Continue stirring for 2 to 3 minutes until the sauce thickens slightly and becomes glossy.

  • Taste the sauce and add a little extra soy sauce or black pepper if desired.
  • Serve the Simple Soy Chicken immediately with steamed rice or noodles.
