Over the years, I have tried many potato soup recipes but always come back to Potato Soup The Old Way. This is the method my Nan used and it still is the best around. I use chicken stock in the recipe but if your a vegetarian then vegetable stock works just as well. This simple main dish recipe is stacked with flavour and is warming and filling during the cold winters we have.
Potato Soup the Old Way
An old recipe my best mates gran used to make. This is simple but incredibly tasty.Use Veg stock for Vegetarian option.

Ingredients
- 60 g butter
- 425 g potatoes peeled and diced to 5mm/1/3in
- 110 g onions diced
- 1 tsp Salt
- 1 pinch ground pepper to taste
- 900 ml chicken stock or veg stock
- 120 ml creamy milk
- herbs garnish
Instructions
- Melt the butter in a heavy saucepan.60 g butter
- When it foams, add the potatoes and onions and toss them in the butter until well coated.425 g potatoes, 110 g onions
- Sprinkle with salt and a few grinds of pepper.1 tsp Salt, 1 pinch ground pepper
- Cover with a butter wrapper or paper lid and the lid of the saucepan.
- Sweat on a gentle heat for approximately 10 minutes.
- Bring the stock to the boil.900 ml chicken stock
- When the vegetables are soft but not coloured add the boiling stock and continue to cook for about 10-15 minutes or until the vegetables are soft.
- Add the milk and purée the soup in a blender or food processor.120 ml creamy milk
- Taste and adjust seasoning if needed.
- Serve sprinkled with a few slices of honey carrots (see recipe) and a few freshly chopped herbs or some of the following garnishes.herbs
