Ingredients
- 10 fresh cherry tomatoes
- ½ ripe mango diced
- ½ cup sweetcorn
- 2 large spring onions scallions/chopped
- ½ large cucumber chopped
- 1 tsp olive oil
- 1 large lemon juice only
- ½ bunch coriander
- 1 pinch sugar
- 1 small lemon juice
Instructions
- Chop the cherry tomatoes into small pieces using a salad knife.10 fresh cherry tomatoes
- Stir the chopped tomatoes together with the chopped spring onions, cucumber, mango and sweetcorn.½ ripe mango, 2 large spring onions, ½ large cucumber, ½ cup sweetcorn
- Mix in any chopped herbs you want to add, with a teaspoon of olive oil and have a taste.
- Add a squeeze of lemon or a pinch of sugar to taste.1 pinch sugar, 1 small lemon
