Mustard and Lemon Sauce is one of my go to recipes when I’m cooking fish. This lovely recipe uses Dijon mustard with chicken stock/broth and lemon juice to create a silky tasty sauce. This also works really well with vegetables. Alternatively add shallots to this sauce and it was amazing with beef.

Ingredients
- 3 oz butter
- 12.5 oz chicken broth
- 3 tbsp flour
- 3 large egg yolks
- 2 tbsp lemon juice
- 2 tbsp Dijon mustard
- Cayenne
- Salt
Instructions
- In a medium saucepan melt the butter. Add the flour3 oz butter, 3 tbsp flour
- Cook for 3 minutes. Stir constantly
- Pour in the broth. Simmer from 5 to 6 minutes.12.5 oz chicken broth
- Stir constantly
- Remove from heat and whisk slightly the egg yolks3 large egg yolks
- Add the lemon juice and mustard and stir well2 tbsp lemon juice, 2 tbsp Dijon mustard
- Put the sauce pan on heat and let cook for 2 minutes
- Add cayenne and salt to tasteCayenne, Salt
