Ingredients
- 3.1 oz butter
- 12.6 oz chicken broth
- 3 tbsp flour
- 3 large egg yolks
- 2 tbsp lemon juice
- 2 tbsp Dijon mustard
- Cayenne
- Salt
Instructions
- In a medium saucepan melt the butter. Add the flour
- Cook for 3 minutes. Stir constantly
- Pour the broth. Simmer from 5 to 6 minutes.
- Stir constantly
- Remove from heat and whisk slightly the egg yolks
- Add the lemon juice and mustard and stir well
- Put the sauce pan on heat and let cook for 2 minutes
- Add cayenne to taste
